Health conscious Americans are eating a ton of egg-whites, putting a strain on the egg supply chain and causing an egg white shortage.
Analysts say as fast food restaurants have added low-cholesterol egg sandwiches to menu boards, and egg suppliers have been struggling to keep pace. Data shows the price of unpasteurized egg whites has soared 80 percent to more than a dollar per pound in the past year alone. Those high prices are hurting independent bakeries, who have had to start rationing dried egg white sales to customers as they can't keep them in stock.
